I love chicken fingers! And these really are delicious. Now, I don’t make them often because I try not to fix a lot of fried food but sometimes I run out of ideas for chicken and so I go to this old faithful recipe. Flip Man loves these because I usually make a ton and he likes to eat them for breakfast. Yeah, I said breakfast and that’s a story for a different post. I adapted this recipe from Emeril’s chicken in a box recipe.
So you start out with some buttermilk. I use a 1/2 cup. Buttermilk miraculously helps chicken keep its moisture.
To the buttermilk I add two teaspoons of Emeril’s seasoning and an egg and whisk that altogether. I used to make Emeril’s seasoning before he starting selling it in the stores. I found a big ‘ol thing of it at Sam’s club and love it. He really is a genius that Emeril. I just love him, not in a romantic way, but in a thank you sharing such great recipes kind of way, but I digress.
Then you grab some chicken fingers. I like buying these at King Soopers, also known as Kroger, if you’re in Ohio. I like when they run the buy one get one free on chicken.
Now throw those suckers in the buttermilk. Let them take a nice bath in it while you get the other stuff ready for dinner. Or if you are more organized than I am, you can soak them overnight.
Now get some flour ready and season that up with some of Emeril’s seasoning. I use the original BAM but you could use his Southwest seasoning too.
Now as I am making dinner, I usually have to deal with 800 interruptions, cries and whines from the Court-man and/or try to keep his little hands off of the countertop.
Now I’ve got Court occupied on something new, I start heating the oil. And it’s not just regular old oil. (I use Canola mostly when I fry.) But I usually have bacon grease on hand. And so I add a couple tablespoons to the oil. Ohhhhh, let me tell ya, that is the secret. It gives the chicken such great flavor. Oh yeah, baby. See the little bits of bacon…
Then you grab a finger.
Roll it around in some flour.
Throw it in the oil.
Add some more chicken tenders and fry ‘em up.
Faint at the mess you have to clean up when you’re done. And yes, another reason why I don’t make these things too often.
And when you’ve finally finished frying what feels like 2,000 pieces of chicken, dig in. I like to make mashed potatoes and corn or green beans with this dish. Yummmmmmmyyyyy!

Yummy Chicken Fingers
- 1 Cup Flour
- 3 teaspoons Emeri's Original Essence
- 1 Egg
- 1/2 Cup Buttermilk
- 2-4 lbs Chicken tenders
- 2-3 tablespoons Bacon Grease
- Canola Oil for frying
- Combine buttermilk, egg, and teaspoon of Emeri'l essence. Add chicken to marinate. Combine Flour and remaining 2 teaspoons of Essence and set aside. Heat Canola oil and bacon grease. Dredge chicken in seasoned flour and set aside. Or if oil is ready throw them in the oil. Fry the chicken. Once chicken fried place on paper towel to drain and keep warm in oven. Serve warm.
